Enjoy this baked salmon with Greek avocado salsa recipe for dinner tonight! Bake the salmon just plain and simple with some salt and pepper. And pair it with a delishous Greek avocado salsa that is made for a perfect dinner and even more perfect prepped lunch the next day is there is anything left.
In a large bowl, combine red onions, cucumber, olives, 1 tsp minced garlic, tomatoes, avocado, feta (mixed in 2 tbsp then added the last tbsp on top once plated up) 1 tbsp lemon juice, 1 tbsp olive oil, parsley, and oregano.
Season with salt to taste.
Preheat oven to 400. Place salmon in a baking dish (skin side down) coated with 1 tsp minced garlic, 1 tbsp of lemon juice, 1 tbsp olive oil, salt & pepper.
Bake for 15 min then broil for 5.
Once done, plate with the salsa and top everything with more lemon juice plus sea salt.

- 1 cup diced roma tomato
- 1 medium avocado, diced
- 1/2 cup chopped red onion
- 1/4 cup sliced kalamata olives
- 1/2 cup cucumber, chopped
- 3 tbsp crumbled feta

- 1 tbsp chopped fresh parsley (a handful)
- 1/2 tbsp oregano
- 2 tbsp olive oil, divided
