Baked Salmon with Greek Avocado Salsa

Enjoy this baked salmon with Greek avocado salsa recipe for dinner tonight!  Bake the salmon just plain and simple with some salt and pepper.  And pair it with a delishous Greek avocado salsa that is made for a perfect dinner and even more perfect prepped lunch the next day is there is anything left.



  1. In a large bowl, combine red onions, cucumber, olives, 1 tsp minced garlic, tomatoes, avocado, feta (mixed in 2 tbsp then added the last tbsp on top once plated up) 1 tbsp lemon juice, 1 tbsp olive oil, parsley, and oregano.
  2. Season with salt to taste.
  3. Preheat oven to 400. Place salmon in a baking dish (skin side down) coated with 1 tsp minced garlic, 1 tbsp of lemon juice, 1 tbsp olive oil, salt & pepper.
  4. Bake for 15 min then broil for 5.
  5. Once done, plate with the salsa and top everything with more lemon juice plus sea salt.
  6. Serve and enjoy!

  • 1 cup diced roma tomato
  • 1 medium avocado, diced
  • 1/2 cup chopped red onion
  • 1/4 cup sliced kalamata olives
  • 1/2 cup cucumber, chopped
  • 3 tbsp crumbled feta
  • 2 tsp minced garlic, divided
  • 2 tbsp lemon juice, divided
  • 1 tbsp chopped fresh parsley (a handful)
  • 1/2 tbsp oregano
  • 2 tbsp olive oil, divided
