Check out this Cauliflower Nachos Tray Bake Recipe, it’s such a simple one, yet it’s also one of the tastiest combos I’ve recently eaten. Tons of flavor and great for you!
Bake Ingredients:

1 head of cauliflower- chopped into small florets⠀
-
1 tbsp of fajita or taco spice mix⠀
-
1 tbsp of olive oil for roasting⠀
-
1/2 can (400g) of black beans – drained and rinsed⠀
-
1/2 avocado – sliced or chopped into chunks⠀
-
200g of tomatoes diced⠀
-
1/2 red onion – finely chopped⠀
-
A bunch of coriander – chopped⠀
-
Salt & pepper to taste⠀

Cheese Sauce Ingredients:

1 cup of peeled and cooked (boiled is best) white potatoes⠀
-
1/2 cup of chopped cooked (boiled is best) carrots⠀
-
2 tablespoons of raw cashews soaked in water for at least 3 hours⠀
-
3 tablespoons of nutritional yeast⠀
-
1 teaspoon of garlic powder⠀
-
1 teaspoon of onion powder⠀
-
1/4 cup of unsweetened almond or soy milk⠀
-
2 tablespoon of lemon juice⠀
-
1/2 teaspoon of yellow mustard
Directions:
- To make the cheese sauce simple blend everything together until creamy and smooth. Let it cool down slightly.
- Add the cauliflower to a large baking tray, sprinkle with the fajita spice mix, olive oil, salt & pepper.
- Roast in the oven for 25 minutes until soft.
- To a bowl add the chopped tomatoes, red onion and coriander, season with a pinch of salt and mix together.
- Remove the cauliflower from the oven and to the same tray add the drained beans, tomato & onion mixture, chopped avocado and drizzle generously with the cheese sauce.
- Serve and enjoy!
