Chicken Caprese Salad

Enjoy this fresh and delicious Chicken Caprese Salad, a perfect combination of grilled chicken, creamy mozzarella, sweet tomatoes, and tangy balsamic glaze, ideal for a healthy lunch or light dinner!

Ingredients:

  • 2 boneless, skinless chicken breasts
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons olive oil
  • 6 cups fresh arugula
  • 8 ounces fresh mozzarella, sliced
  • 1 pint cherry tomatoes, halved
  • 1/4 cup fresh basil leaves, torn
  • 1/4 cup balsamic glaze (store-bought or homemade)
  • 1 cup balsamic vinegar
  • 2 tablespoons honey (optional)

Directions:

  1. Prepare the Chicken:
    • Season the chicken breasts with salt and freshly ground black pepper.
    • Heat 2 tablespoons of olive oil in a grill pan or skillet over medium-high heat.
    • Add the chicken breasts and cook for about 5-7 minutes on each side, or until the chicken is cooked through and has nice grill marks.
    • Remove the chicken from the pan and let it rest for a few minutes before slicing it into thin strips.
  2. Make the Balsamic Glaze (if making at home):
    • In a small saucepan, combine the balsamic vinegar and honey (if using).
    • Bring to a simmer over medium heat, then reduce the heat to low and let it simmer until the vinegar has reduced by half and has a syrupy consistency, about 10-15 minutes.
    • Remove from heat and let it cool.
  3. Assemble the Salad:
    • On a large serving platter or individual plates, create a bed of fresh arugula.
    • Arrange the sliced fresh mozzarella and halved cherry tomatoes over the arugula.
    • Place the grilled chicken strips on top of the salad.
    • Sprinkle the torn basil leaves over the salad.
  4. Finish and Serve:
    • Drizzle the balsamic glaze over the entire salad.
    • Serve immediately, with extra balsamic glaze on the side if desired.

Tips:

  • For an extra burst of flavor, you can marinate the chicken breasts in a mixture of olive oil, garlic, lemon juice, and Italian herbs for 30 minutes before grilling.
  • If you prefer, you can substitute the arugula with mixed greens or baby spinach.
  • This salad can also be served as a sandwich or wrap by stuffing the ingredients into a whole wheat pita or tortilla.
