Lemon Garlic Mediterranean Shrimp Recipe

  • 1 pound (450 grams) large shrimp, peeled and deveined
  • 3 tablespoons olive oil
  • 4 garlic cloves, minced
  • 1 lemon, zest and juice
  • 1/2 teaspoon red pepper flakes (optional for heat)
  • 1 teaspoon dried oregano
  • Salt and black pepper, to taste
  • 1/4 cup fresh parsley, chopped
  • Additional lemon wedges for serving

  • Prepare the Shrimp:
    • Rinse the shrimp under cold water and pat dry with paper towels.
  • Marinate the Shrimp:
    • In a large bowl, combine olive oil, minced garlic, lemon zest, lemon juice, red pepper flakes (if using), oregano, salt, and pepper.
    • Add the shrimp to the marinade, making sure they are well-coated. Let them marinate for 15-30 minutes in the refrigerator.
  • Cook the Shrimp:
    • Heat a large skillet over medium-high heat.
    • Remove the shrimp from the marinade and add them to the skillet in a single layer.
    • Cook for about 2 minutes on each side, or until the shrimp turn pink and opaque.
    • During the last minute of cooking, pour the remaining marinade over the shrimp to heat through.
  • Garnish and Serve:
    • Transfer the shrimp to a serving dish.
    • Sprinkle chopped parsley over the top and garnish with lemon wedges.
    • Serve immediately, with additional lemon wedges on the side for squeezing over the shrimp.
