  • 4 large eggs
  • 1/2 cup fresh spinach, chopped
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup olives, sliced (Kalamata or black)
  • 1/4 cup feta cheese, crumbled
  • Salt and pepper, to taste
  • 1 tablespoon olive oil

  • Prepare Ingredients:
    • Wash and chop the spinach.
    • Halve the cherry tomatoes and slice the olives.
    • Crumble the feta cheese.
  • Beat the Eggs:
    • In a bowl, beat the eggs with a pinch of salt and pepper until well combined.
  • Cook the Vegetables:
    • Heat olive oil in a non-stick skillet over medium heat.
    • Add the spinach and tomatoes, sautéing until the spinach wilts and the tomatoes soften, about 2-3 minutes.
  • Add Eggs:
    • Pour the beaten eggs over the sautéed vegetables, tilting the pan to ensure even distribution.
  • Add Toppings:
    • Sprinkle the sliced olives and crumbled feta cheese evenly over the top of the eggs.
  • Cook the Omelette:
    • Let the eggs cook undisturbed for a few minutes until the edges start to set and the bottom is golden brown.
    • With a spatula, carefully fold one side of the omelette over the other, forming a half-moon shape, and cook for another minute or until the eggs are set to your preference.
  • Serve:
    • Slide the omelette onto a plate, season with additional salt and pepper if needed, and serve hot.
