Mediterranean-Style Grilled Vegetable Wrap Recipe

  • 1 zucchini, sliced lengthwise
  • 1 bell pepper (any color), deseeded and cut into wide strips
  • 1 eggplant, sliced into rounds
  • 1 red onion, cut into rings
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 2 teaspoons dried oregano
  • 4 whole wheat or spinach tortillas
  • 1/2 cup hummus
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup Kalamata olives, pitted and sliced
  • 1/2 cup arugula or baby spinach
  • Optional: drizzle of balsamic vinegar or lemon juice

  • Prepare the Vegetables:
    • Preheat your grill or grill pan over medium heat.
    • Brush the zucchini, bell pepper, eggplant, and red onion with olive oil, then season with salt, pepper, and oregano.
  • Grill the Vegetables:
    • Place the vegetables on the grill or in the grill pan.
    • Grill for about 4-5 minutes per side, or until they are tender and have nice grill marks.
    • Remove the vegetables from the grill and set aside to cool slightly.
  • Assemble the Wraps:
    • Warm the tortillas on the grill for about 30 seconds each side, just to make them pliable.
    • Spread each tortilla with a generous layer of hummus.
    • Add the grilled vegetables, feta cheese, olives, and a handful of arugula or baby spinach onto each tortilla.
  • Roll Up the Wraps:
    • Carefully fold the sides of the tortilla in, then roll it up tightly from the bottom to enclose the filling.
    • If desired, you can cut the wrap in half to make it easier to eat.
  • Serve:
    • Serve the wraps immediately, or wrap them in foil to keep them warm.
    • For an extra flavor kick, drizzle with a bit of balsamic vinegar or lemon juice just before serving.
