Pea and Mint Salad

  • 2 cups of fresh or frozen peas (if using frozen, thaw them first)

  • 1 tablespoon white wine vinegar
  • 1 teaspoon honey (optional, for a touch of sweetness)

Directions:

  1. Prepare the Peas:
    • If using fresh peas, blanch them in boiling water for 1-2 minutes until they are bright green and tender. Drain and rinse under cold water to stop the cooking process.
    • If using frozen peas, ensure they are thoroughly thawed and drained.
  2. Make the Dressing:
    • In a small bowl, whisk together the olive oil, white wine vinegar, and honey (if using). Season with salt and black pepper to taste.
  3. Combine the Salad:
    • In a large mixing bowl, combine the prepared peas, chopped mint, and crumbled feta cheese.
