This Peach Burrata Salad with Prosciutto & Pine Nuts Recipe is a great summer salad, perfect for lunch or dinner. Its the perfect addition for your Mediterranean Diet rotation!
- Add the arugula to a large bowl. Pour in the balsamic vinegar & olive oil (+ salt & pep) & mix thoroughly so all the greens are evenly coated.
- Serve the greens & then top each bowl with sliced peaches, sliced heirlooms, prosciutto (rolled up then cut into smaller pieces), burrata, and basil (lay all the leaves on top of each other, roll them up into one large strip and slice).
- Lastly, drizzle a generous about of balsamic glaze & olive oil on top.
- Sprinkle with pine nuts & add salt & pepper to taste.
- Serve and enjoy!
2 large handfuls of arugula
2 heirloom tomatoes (one red & one yellow would be pretty)
4 slices of prosciutto
1 @belgioiosocheese burrata ball
Trader Joes balsamic glaze
1 tbsp balsamic vinegar
1 tbsp olive oil
6 fresh basil leaves
3 tbsp pine nuts
