Spinach and Feta Stuffed Mushrooms

  • 12 large mushrooms, stems removed
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 2 cups fresh spinach, chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup breadcrumbs
  • Salt and pepper, to taste
  • Optional: 1 tablespoon fresh herbs (such as parsley or dill), chopped

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C).
  2. Prepare the Mushrooms:
    • Clean the mushrooms with a damp cloth and remove the stems. Set the caps aside.
    • Chop the mushroom stems finely.
  3. Cook the Filling:
    • In a skillet, heat olive oil over medium heat. Add the minced garlic and chopped mushroom stems, sautéing until softened, about 3-4 minutes.
    • Add the chopped spinach to the skillet and cook until wilted, about 2 minutes.
    • Remove from heat and let the mixture cool slightly.
  4. Mix the Filling:
    • In a bowl, combine the spinach mixture with crumbled feta cheese and breadcrumbs. Season with salt and pepper, and add the chopped herbs if using.
    • Stir everything together until well combined.
  5. Stuff the Mushrooms:
    • Fill each mushroom cap with the spinach and feta mixture, pressing gently to stuff them well.
  6. Bake:
    • Place the stuffed mushrooms on a baking sheet lined with parchment paper.
    • Bake in the preheated oven for 20-25 minutes, or until the mushrooms are tender and the tops are slightly golden.
  7. Serve:
    • Serve the Spinach and Feta Stuffed Mushrooms warm as an appetizer or side dish.
