Spinach and Strawberry Salad

  • Fresh Spinach: 4 cups, washed and dried
  • Strawberries: 2 cups, hulled and sliced

  • Poppy Seed Dressing:
    • Olive oil: 1/4 cup
    • White wine vinegar: 2 tablespoons
    • Honey: 2 tablespoons
    • Dijon mustard: 1 tablespoon
    • Poppy seeds: 1 teaspoon
    • Salt and pepper to taste

  1. Prepare the Dressing:
    • In a small bowl, whisk together olive oil, white wine vinegar, honey, Dijon mustard, and poppy seeds. Season with salt and pepper according to taste. Adjust the sweetness or acidity as needed.
