Spinach and White Bean Soup

  • 1 tablespoon olive oil
  • 1 large onion, finely chopped
  • 4 cups vegetable broth
  • 2 cans (15 ounces each) white beans, such as cannellini or great northern, rinsed and drained
  • 4 cups fresh spinach leaves, roughly chopped
  • Salt and black pepper, to taste
  • Optional: Grated Parmesan cheese, for serving
  • Optional: Red pepper flakes, for a bit of heat

  1. Sauté the Onion:
    • Heat the olive oil in a large pot over medium heat.
    • Add the chopped onion and sauté until it is translucent and slightly golden, about 5-7 minutes.
  2. Add Broth and Beans:
    • Pour the vegetable broth into the pot.
    • Add the drained white beans.
    • Bring the mixture to a boil, then reduce the heat and let it simmer for about 15 minutes to allow the flavors to blend.
  3. Add Spinach:
    • Stir in the chopped spinach.
    • Continue to simmer the soup until the spinach has wilted and is bright green, about 2-3 minutes.
  4. Season the Soup:
    • Season with salt and black pepper to taste.
    • If desired, add a sprinkle of red pepper flakes for a little extra heat.
